A Tribute

The Silvestris made a name for themselves in Honduras after Dino Silvestri's first restaurant in the city of La Ceiba, Maxim's, was acknowledged as one of the country's best. "Don Di" as everyone used to call him, arrived at La Ceiba from Trieste, Italy, soon after World War II. He later retired on the Caribbean island of Roatán and opened The Buccaneer Inn, a small hotel offering home-made pasta. He passed on his restaurant legacy to his son, Romeo, who has welcomed locals and visitors at Casa Romeo's since 1978. The Caribbean-Italian food is excellent with scrumptious servings of seafood, steaks and pasta. If you ask Romeo or his wife, Connie for their cooking secrets, they'll answer that their best ingredients are extra-virgin olive oil, garlic and homegrown herbs, with island seafood and the family's love for traditional pastas.
